Rossy Herrera always had a feeling she wanted to own her own restaurant. It was time she spent as a server in Mexican restaurants that fueled her desire to become a restaurant owner, and that dream came true this past Thursday with the opening of Rosita’s Pancake House.

The new restaurant sits in the Rushville Kroger plaza, and judging by the first two days of its existence, the restaurant will be a success.

Rosita’s is open daily from 8 a.m. to 3 p.m., and it serves a variety of breakfast and lunch foods that are sure to crave anyone’s hunger.

“I am so excited about this opening,” Herrera said. “I always liked being a server, and I loved the business, but it gave me the desire to own my own place.”

The smile on Herrera’s face tells the story, and she credits her former husband for helping her make this dream come true.

“I am so happy right now, and I am proud of myself because I just never felt capable of doing this myself, but here we are,” she said.

The pancakes are soft and fluffy as the menu advertises, and the portions are generous. The biscuits on the biscuits and gravy are large, with a nice, warm and buttery homemade taste to them, and the bacon is cooked to perfection, with a light, crisp feel on each bite. And the eggs - over medium to be precise - are fried just right. Not too runny, but runny enough to clean the plate with a side of toast.

There are many more items to choose from as well.

“Oh, I love the tenderloins here,” Herrera said. “And, the strawberry crepes are delicious as well.”

Rossy has been more than pleased with the support from the community.

“I really want to thank the people of Rushville for their warm welcome,” Herrera said. “We have been very busy these opening days, yet, everyone has been so understanding and patient.

“I invite everyone to give us a try,” she said. “We promise to always do our best to please our customers, and myself and my crew will always try to do our best and always improve each day.”
